PART I. EXTRACTION OF LIPID FRACTIONS AND BASIC ANALYTICAL TECHNIQUES IN
ANALYSIS OF PHOSPHOLIPIDS

                    Phospholipids play an important role in the proper functioning of the human body. Therefore, their daily deliv-
                    ery with food is recommended. Since the biological activity of phospholipids is determined by their chemical
                    structure, it is necessary to use analytical techniques to determine the full composition of phospholipids present
                    in food, taking into account not only the phospholipid classes dependent on the structure of hydrophilic moiety
                    but also the kind of the fatty acids found in the structure. Determination of biological effects of lipid compounds
                    present in the human body requires a knowledge of their composition, which may be accomplished by targeted
                    and untargeted analysis. Currently, a number of analytical techniques are used for the qualitative and quantitative
                    determination of the phospholipid classes. These method embrace: one- and two-dimensional TLC or normal
                    phase and hydrophilic interaction HPLC. The determination of fatty acids present in individual phospholipid
                    classes is possible with the use of reverse phase HPLC and gas chromatography.
