PART II: DETERMINATION METHODS AND CHALLENGES
Due to the biological activity of biogenic amines, their qualitative and quantitative determination in food is
essential to protect human health and life. Currently high-performance liquid chromatography (HPLC), thin
layer chromatography (TLC) and the molecular absorption spectrophotometry are the most often used method
for monitoring of biogenic amines in food. However, these methods are time-consuming, not environmentally
friendly and in most cases require derivatization. Therefore, it is necessary to develop a new, rapid and based
on the principles of green chemistry analytical methodologies that allow to determine of AB in food. The appli-
cation of SPME and SBSE extraction in the preparation of samples and gas chromatography (GC) and capillary
electrophoresis (CE) for qualitative and quantitative determination seems to be promising. However, they require
refinement and validation what might be an idea to a new study.
